A Sudanese reader, Tayseer, sent me a detailed description of the dinner plates of Hasan Turabi (see the photo from the other day):
"Regarding the lunch photo of Hasan Al-Turabi; the plate in the middle is a traditional Sudanese meal called "waika" which is a thick soup mixture of okra (bamia makhlouta), or mixed minced beef with thick tomato concentrate, covered by the thin dough on top of it called "Kisra", and is eaten by hand. After the bread, fries, and salad, there is a "saj" meat plate, either mutton or grilled pigeon. the plate after that is Sudanese cheese, which is way more delicious than any white cheese you could try, followed by a plate of beans (فول مدمس) a must-have in every Sudanese breakfast, lunch or dinner meal. Hope I haven't made you as hungry as I am right now!"
